Golden Egg Curry

Experience the rich, vibrant flavors of this Golden Egg Curry, made with grass-fed organic ghee and aromatic organic curry leaves. Hard-boiled eggs are fried in ghee then simmered in a flavorful, spiced curry gravy. The organic curry leaves bring a fresh, earthy aroma that elevates the curry, blending beautifully with the bold spices. Perfect for a satisfying meal, this egg curry is easy to prepare and pairs wonderfully with rice or flatbreads.

Ingredients:

8 whole egg(s)
Organic Grassfed Ghee* for frying (optional)
2 tomatoes
2 Tbsp Ghee
1 onion(s) chopped
1 clove garlic* finely chopped
1 2/3 cups coconut milk full-fat
1 tsp Organic High Curcumin Turmeric* ground
1/2 tsp Organic Cayenne* ground
6 Organic Dried Curry Leaves*

Instructions:

1. Put whole eggs in water, bring to a boil. Boil for about 6 minutes, then cool in a bowl of cold water. Peel.

2. (optional) Fry eggs. Use ghee or oil heated to approximately 325ºF (a piece of bread will brown in about 20 seconds) Fry until crispy golden brown. Drain on paper towel.

3. Cross score the top of each tomato. Dip in boiling water for about 20 seconds. Peel skin.

4. Remove cores and seeds from tomatoes, then chop rest of tomato.

5. Melt ghee in frying pan. Add onion and garlic, cook until soft and lightly golden.

6. Add chopped tomato, cook until softened. Stir in coconut milk and spices. Salt to taste.

7. Bring to boil and simmer for 2-3 minutes, sauce will slightly thicken.

8. Add boiled/fried eggs and simmer for 2-3 minutes. Garnish with curry leaves.
