Curried Butternut Squash & Apple Soup

Warm up with a bowl of Curried Butternut Squash and Apple Soup, a cozy blend of sweet and savory flavors made even richer with grass-fed organic ghee and organic spices. The creamy butternut squash pairs beautifully with the natural sweetness of apples, while the ghee adds a buttery smoothness. A fragrant mix of curry spices brings warmth and depth, creating a perfectly balanced soup that’s both nourishing and comforting.

Ingredients:

3 TBSP Organic Grassfed Ghee*
1 onion(s) large, diced
1 butternut squash or 2 medium sweet potatoes
4 carrot(s)
2-3 apple(s) diced
4 garlic* cloves
6 cups broth chicken or vegetable
2 tsp ginger* freshly grated
1 tsp Organic Coriander* ground
1/2 tsp Organic High Curcumin Turmeric* ground
1/4 tsp Organic Cayenne* ground
1/2 tsp Organic Garam Masala* ground

Instructions:

1. Dice the onion, butternut squash (or sweet potatoes), as well as the carrots and apples.

2. In a large soup pot, melt the ghee on medium heat and add the veggies, half the apples, and whole garlic.

3. Cover and sweat the vegetables on medium-low heat for 10 minutes.

4. Then add 6 cups of broth (or enough to almost cover the veggies), and all the spices, and simmer for 20 minutes or until vegetables are soft.

5. Use a food processor, blender, or immersion blender to purée everything until smooth.

6. Return to the soup pot, add the remaining diced apples and simmer for another 5-7 minutes until apples are slightly soft.

7. Add sea salt to taste.
