Carrot salads are a popular dish throughout India. The spices in this are heated in the ghee so the flavor can be released into the dressing. For more flavor allow to sit for about a half hour before serving.
1. Heat ghee in a small pan over medium heat, add mustard and cumin seeds, then cover and shake pan until you hear the seeds start popping.
2. Add turmeric, salt and jaggery, then remove the pan from the heat and let cool for 5 minutes.
3. Mix in lemon juice, then toss carrot through.
4. Cover and let sit for 30 minutes. Garnish with cilantro leaves.
