Tomato Bun Sloppy Joes

Makes: 4 servings

Prep Time: 5 minutes

Cook Time: 40 minutes

Forget napkins as you plunge into this dish. These bunless sloppy joes are keto, paleo, flavorful, and as messy as ever.

Ingredients:

1 portion Ground Beef Base (see recipe, linked in the notes below)
3 tbsp tomato paste
1/2 tsp thyme dried, crushed
1 cup apple cider
1 cup broth (beef)
2 tbsp dijon mustard
2 tomatoes medium size, sliced into 1/2 inch cuts
parsley freshly chopped

Instructions:

1. In large pan, add ground beef base, thyme and tomato paste, and cook evenly.

2. Add apple cider, mustard, and beef broth.

3. Bring to a simmer, cover, reduce heat, simmer for 20 minutes, or until it reaches a desired thickness.

4. On a plate, lay out tomato slices, then cover with the mix. Garnish with parsley.

NOTES:

Serve with Ancho-Spiced Roasted Butternut Squash.
