Ricotta Pancakes in Cardamom Saffron Syrup

Malpua is an authentic Indian Dessert made with ricotta which is rich and perfect for those with a sweet tooth. This recipe features pistachios and saffron in a luscious syrup.

Ingredients:

1 3⁄4 cup water, separated
1 cup sugar
1/4 tsp Organic Kashmiri Saffron*
3 Organic Cardamom*, green pods
1 cup ricotta cheese drained in a sieve overnight
1 cup flour sifted
1/4 cup Grassfed Organic Ghee*
1/4 cup pistachios chopped

Instructions:

1. Simmer sugar, saffron, cardamom, and 1 cup water in a 1-qt. saucepan over medium heat for 12 minutes.

2. Mix ricotta, flour, and 3⁄4 cup water in a bowl to make a batter.

3. Heat ghee in a 12" nonstick skillet over medium-high heat.

4. Working in batches, spoon 2-tbsp. portions of batter into skillet, and fry until golden, 2-3 minutes.

5. Arrange pancakes in a shallow dish with sides.

6. Pour cardamom syrup over top.

7. Sprinkle with pistachios.

8. Let soak for 5 minutes before serving.
