Mexican Mole Sauce

Mexican mole sauce is a rich, complex blend of flavors that’s deeply rooted in tradition. Made with a unique combination of ingredients like chiles, spices, nuts, chocolate, and fruits like raisins and plantains, this sauce delivers a savory-sweet punch that's unforgettable. Mole is often used to elevate chicken, pork, or enchiladas because it brings warmth and a burst of authentic flavors to your table.

Ingredients:

1 cup onion(s) chopped
3 large garlic cloves, chopped
2 tsp Organic Grassfed Ghee*
2 large roma tomatoes, halved
1/4 cup Organic Monukka Raisins*
1/2 cup peanuts, dry roasted
1 tsp sugar
2-1/2 tsp Organic Kashmiri Chili Powder*
1/4 tsp Organic Cinnamon*, ground
3 Organic Cloves*, whole
1/8 tsp Organic Sesame Seeds*
1/4 cup almonds
1/2 ripe plantain peeled
3/4 tsp Organic Cumin*, ground
1/4 tsp Organic Coriander*, ground
1/8 tsp Himalayan Pink Salt*
1 oz unsweetened chocolate

Instructions:

1. Saute onion and garlic in ghee until fragrant.

2. Add all ingredients to food processor and blend until smooth and pour-able.

3. Return to stove-top and simmer for 5 minutes, or until hot, before serving.

4. Spoon over meat or enchiladas.
