Instant Pot Kitchari

Makes: 4 servings

Cook Time: 45 minutes

Kitchari is to Indian food what Chicken Noodle Soup is to American food. Its a food for rainy days when your’re under the weather. This dish is considered a comfort food and is easily digested.

Ingredients:

1/2 cup Organic Himalyan Basmati Rice*
1/2 cup Organic Moong Daal Split*
(ALTERNATIVELY, You can use 1 cup of our Organic Kitchari*)
1 TBSP Grassfed Organic Ghee*
1/2 tsp High-Curcumin Turmeric* ground
3-1/2 cups broth or water
1 tsp Himalayan Pink Salt*

Instructions:

1. In a sieve, mix the moong dal and rice. Or if using our pre-mixed Kitchari, simply measure it out. Rinse thoroughly with water.
2. Add all ingredients to your Instant Pot.
3. After locking lid, set to Pressure Cook for 20 minutes.
4. After cooking is done, let it release the pressure naturally. Then take off lid.
5. Optional mix-and-match accompaniments: Cherry tomatoes, halved, Black pepper, Ghee Freshly squeezed lime, .Plain yogurt Cilantro Avocado
