Instant Pot Basmati Pilau

Laced with spices, fried onions, and covered with ghee, this aromatic rice is a welcome addition to any Indian meal. We’ll get all the delicious flavor and bold taste without the worry of biting into whole spices.

Ingredients:

3-4 Organic Cardamom*, green pods
6-8 Tellicherry Extra Bold Peppercorns*, black
4 Organic Cloves* whole
2 inch Organic Cinnamon* whole stick
1 tbsp Organic Ghee*
1/2 tsp Organic Cumin* whole
1 cup onion, red thinly sliced
1 tsp Himalayan Pink Salt
1 cup Himalayan Basmati Rice* rinsed and drained
1 1/4 cups filtered water

Instructions:

1. Combine peppercorns, cardamom pods, cloves, and cinnamon in a muslin bag or a spice infuser, and slightly crush.

2. Select sauté on Instant Pot and set on high heat. When ready, add ghee and heat until shiny.

3. Add cumin seed and wait 30 seconds. You'll hear a popping sound.

4. Combine sliced onions, and salt. Stir as you go, until the outer linings of the onions are browned.

5. Combine the mix with the rice until coated evenly by ghee. Then, combine the water and spices you crushed previously.

6. After locking the lid, manually adjust to high pressure and cook for 5 minutes.

7. When done, let sit for 10 minutes then release any remaining pressure rapidly.

8. Open the top and serve.
