Indian Lemon Rice with Ghee-Roasted Peanuts

Lemon Rice with Ghee-Roasted Peanuts is a popular South Indian dish because it's aromatic and tasty as well as easy. You just need a handful of ingredients that are staples of every Indian pantry, and it comes together quickly.

It's both basic and beautiful. All you have to do is mix cooked rice with a handful of ghee-roasted peanuts and spices tempered in ghee, and then drizzle freshly squeezed lemon over it all. Couldn't be any easier!

Ingredients:

4 cups Organic Aged Basmati Rice*, already cooked
3 tbsp Grassfed Organic Ghee*
pinch of the Best Hing Ever*
5 tbsp peanuts
3/4 tsp Organic Brown Mustard Seeds*
1/2 tbsp Organic Dried Ginger Granules*
2 Organic Chipotle Morita Chili Peppers*, chopped
20 Organic Curry Leaves*
1/2 tsp Organic Lakadong Turmeric Powder*
1/2 tsp salt, adjust according to taste
2 tbsp water
1 medium lemon

Instructions:

1. In a skillet, melt 1 tbsp of ghee over medium heat. Add peanuts and fry until golden, then remove from skillet.
2. In the same skillet, melt remaining 2 tbsp of ghee over medium heat. Add a pinch of hing and stir until it blooms and becomes aromatic.
3. Add mustard seeds, ginger granules, chopped chili peppers, and curry leaves to the skillet and cook for 30 seconds to a minute until it becomes aromatic.
4. Add turmeric and salt to the skillet, then immediately pour in 2 tbsp of water and cook until it evaporates.
5. Remove from heat. Mix your now tempered spices with your already cooked rice and the ghee-roasted peanuts.
6. Drizzle with the juice of one lemon. Mix well. Taste the rice mixture and add more lemon juice or salt if necessary.
7. Serve garnished with cilantro, peppers, or additional roasted peanuts and a side of yogurt.
