Carrot Raita Recipe

Raita is a versatile lightly-spiced yogurt-based dip that accompanies almost every Indian dish. It serves as a welcoming cooling condiment that balances out rich curries and spicy biryanis. Cucumber raita is the most common type of raita and our version incorporates shredded carrot for a splash of color and extra nutrition. This tasty condiment comes together in 5 minutes!

Ingredients:

1 cup yogurt (full-fat or dairy-free)
½ cup peeled and grated carrot
½ cup peeled and grated Persian cucumber
2 teaspoons finely chopped fresh mint
2 teaspoons finely chopped fresh cilantro
½ teaspoon finely minced red onion
¼ teaspoon roasted Cumin Powder* (roasting the cumin is optional but it brings out its flavor)
⅛ teaspoon Kashmiri Chili Powder* (or sweet paprika)
¼ teaspoon Himalayan Pink Salt*
Generous pinch of Organic Amchoor Powder* and Black Salt* (or Bombay Chaat Masala*)

Instructions:

1. In a small bowl, add the yogurt, grated carrot, grated cucumber, chopped mint, chopped cilantro, and minced red onion. Mix well with a whisk or a fork.
2. Add roasted cumin powder, Kashmiri chili powder, salt, amchoor powder, black, and salt. Mix well, taste and adjust the salt and spices.
3. Raita is best served fresh but it’s okay to leave it in the fridge for an additional day.
